The vegetarian way!
Being back in Kerala is a wonderful feeling!
With the temperature around 32 degrees Celsius, and the sun at its glorious best, I was all excited to make some bitter gourd fries.

While I have seen many who hate the very sight of this
vegetable, I adore it. The soft,thorny crevices on its surface, the unique
shape of its seeds, the tender green colour- the bitter gourd never ceases to capture my attention in any vegetable market .
The vegetarian diet becomes such a yummy affair for me if I have some of the bitter gourd fries by my plate side.
Last evening Amma and me bought some bitter gourds while shopping at an organic farm. After washing it thoroughly four to five times( we can't trust even organic products these days), I dried it and kept it in the refrigerator.
So this morning, all my time was spent on my lover veggie...!

To make these, I sliced five to six bitter gourds. |

Kept it in sunlight for about five hours till it dried up. |
The dried up slices can be stored in an air tight, dry container.
This can be deep fried,preferably in coconut oil. (Since the bitter gourd is dried, it won’t suck in much oil.)
Hot rice mixed with some ghee and the bitter gourd fries! What more should I ask for?!
I can eat till the rice bowl is empty!
